No Added Sugar Banana Bread

4 ripe bananas
3 eggs, lightly beaten
1/2 cup coconut oil or light olive oil
1/4 cup yoghurt
2 teaspoons vanilla extract
1 3/4 cups self-raising wholemeal flour
1 teaspoon ground cinnamon
4 medjool dates, pitted, halved
Handful of nuts
1/4 cup desiccated coconut
Handful of Pepita seeds
Preheat oven to 160C. Grease the base and sides of a 11.5cm x 22cm loaf pan.
In a large bowl, use a fork to mash the bananas. Stir in eggs, oil, yoghurt and vanilla. Sift flour and cinnamon over the bowl of bananas; adding the flour husks back to the flour mixture along with the medjool dates and nuts. Add coconut then gently stir until combined.
Spoon mixture into prepared pan, using a spatular to smooth the batter. Sprinkle pepita seeds over mixture. Bake for 50 - 60 minutes or until skewer inserted into the centre comes out clean. Stand in the pan for 5 minutes, before inserting onto a wire rack to cool completely.
Enjoy toasted with butter or coconut oil or stacked with berries and sliced banana.
