Chopped Apple Cake.

Who doesn’t love a hearty, fresh apple cake? It’s the perfect balance of comfort and nutrition, blending the natural sweetness of apples with wholesome ingredients to create a dessert that feels indulgent yet nourishing. Apples bring a wealth of health benefits to the table—they’re packed with dietary fiber for gut health and loaded with antioxidants like quercetin, which supports brain and immune health.

Pair them with walnuts (top nut for brain health), warming spices like cinnamon (which may help regulate blood sugar), and a light drizzle of honey or maple syrup for a satisfying treat that’s as good for your body as it is for your soul. Whether served as an afternoon snack or a post-dinner delight, this apple cake is a delicious way to celebrate the goodness of real, whole foods!

 

3 large apples, peeled and chopped as finely as possible

Juice and zest from 1 orange

3 cups self-rising flour

1 tsp ground cinnamon

1/2 tsp ground nutmeg

¾ cup brown sugar

1 cup extra virgin olive oil

2 large eggs

Handful of walnuts, finely chopped

Confectioner’s sugar for dusting

 

1.     Preheat oven to 160C fan-forced or 180C convection. Grease and line a 23cm cake pan with baking paper.  

2.     Place the chopped apples in a large bowl and add orange zest and juice.

3.     In a large mixing bowl sift together the flour, cinnamon and nutmeg; set aside.

4.     In the bowl of a stand mixer fitted with a whisk, add sugar and extra virgin olive oil. Mix on low for 2 minutes until well-combined. Add the eggs, one at a time, and continue to mix another 2 minutes until mixture increases in volume - thicker but still runny. Sift over the flour and spices. Using a spatula or wooden spoon, stir until just combined; it will be a thick batter.

5.     Add apple mixture to the batter and mix until well-combined. Spoon thick batter into the pan, and level the top with the back of a spoon. Bake for 45 minutes or until an inserted tooth pick or wooden skewer comes out clean.

6.     Cool completely in pan. When ready drizzle cake with honey/maple syrup, dusting of cinnamon and serve with coconut yoghurt.
