This mixture is enough for 1 serving.


95g can tuna, drained

1 medium celery rib, finely chopped

2 cos lettuce leaves, finely sliced

juice from 1/2 lemon

pepper and garlic salt to taste

Squeeze of mayo

1 large cucumber

Sesame seeds, to garnish


  1. Prepare the tuna salad by combining the tuna, celery, lettuce, mayo, garlic salt and pepper. Stir together until well combined. Taste to check for seasoning. Set aside.

  2. Wash the cucumber well, slice off the ends, and slice it in half vertically. Scoop out the inside of the cucumber and place the cucumber flesh into the tuna mixture bowl. Stir until well combined - taste to see if you need more seasoning.

  3. Spoon the tuna salad into the cucumber boats and garnish with a sprinkle of sesame seeds. Close your eyes and sink your teeth into a delicious, crunchy, nutritious lunch. Eat and enjoy!
