Oat and hemp seed cookies are not just a delicious treat—they’re packed with nutritional benefits! Oats provide a rich source of dietary fiber, particularly beta-glucan, which supports heart health and helps maintain stable blood sugar levels. Hemp seeds are a powerhouse of plant-based protein, omega-3 and omega-6 fatty acids, and essential minerals like magnesium and zinc, promoting brain health and reducing inflammation. Coconut sugar adds a natural sweetness with a lower glycemic impact, while grass-fed butter offers healthy fats and fat-soluble vitamins like A and E. The vanilla seed paste adds a touch of flavor while being antioxidant-rich, making these cookies a wholesome and satisfying snack.
Oat and Hemp Seed Cookies
1 cup rolled oats
1 cup plain flour
½ cup shredded coconut
½ cup coconut sugar
¼ cup hemp seeds
1 teaspoon vanilla seed paste
150g grass fed butter
¼ cup honey or golden syrup
1 teaspoon bicarbonate soda
Handful of dark chocolate chips or dark melted chocolate, to drizzle after baked (if desired)
1. Pre-heat oven to 170C. Line 2 baking trays with baking paper.
2. In a large bowl, combine oats, flour, coconut, hemp seeds, sugar and vanilla. Make a well in the centre and set aside.
3. Place butter and honey/golden syrup in a medium sauce pan over medium high heat. Once melted, add bicarbonate soda. Stir until combined. Pour into the bowl of dry ingredients. Stir until well combined. Roll level tablespoons of mixture into balls. Place onto baking tray, about 2cm apart. Then press down slightly. Press a few dark chocolate chips into dough, if you desire.
4. Bake for about 12-15 minutes until golden. Stand on tray for 5 minutes then transfer to a wire rack to cool completely. Drizzle with melted chocolate if you so desire.
