Silverbeet and Spinach Pie



Makes 8-10 portions 


GREEN

1 bunch silverbeet (12 leaves), trimmed, white stems thinly sliced, green leaves finely shredded 

3 green onions, sliced


DAIRY 

500g ricotta 

250g greek style feta, crumbled 

1/2 cup Parmesan cheese 

6 eggs, lightly whisked 

1 teaspoon nutmeg 

Half a bunch of dill, chopped 

Half a bunch of mint, chopped


PASTRY

100g butter, melted 

1/4 cup olive oil, plus extra for drizzling 

375g Antoniou Filo Pastry (best brand)

2 tablespoons sesame seeds 


1️⃣ Toss GREEN ingredients together in a super large bowl or two medium bowls.


2️⃣ In a medium bowl, combine DAIRY together , along with nutmeg, herbs, a good crack of pepper & pinch of salt. Then add this to the GREEN mixture.


3️⃣ Combine melted butter & oil together. Lightly grease a 32cm x 22cm rectangular oven-proof dish. 


4️⃣ Preheat oven to 180C. 


5️⃣ Line the base of the dish with 8 sheets of pastry; brush the oil/butter mixture in between each layer. Spoon mixture onto greased pastry & top with 3 sheets. Brush with oil/butter mixture then tear the remaining pastry & assemble onto greased pastry in a scrunched-up manner. Drizzle top with remaining oil/butter. If nothing remains, then simply drizzle top with olive oil. Scatter over sesame seeds. Place in preheated oven & bake for 50-55 minutes or until golden. 


6️⃣ Remove from oven, and set aside for 10 minutes to allow to cool slightly. Enjoy with a a huge serving of salad greens and a squeeze of lemon juice & sweet chilly & Lebanese garlic dip 👌🏻
