The Ultimate Banana Bread

3 large mashed (about 1 1/3 cup mashed banana)

2 eggs, at room temperature

⅓ cup (104g) pure maple syrup

½ cup (113g) greek yogurt

1 teaspoon vanilla extract

1 ¾ cup (198g) whole wheat flour

1 teaspoon baking soda

1 teaspoon cinnamon

¼ teaspoon salt

85ml coconut or olive oil

 

  1. Preheat oven to 180 degrees C. Grease and line a 20cm x 10cm loaf pan with baking paper, extending about 3cm over the side of the pan.

  2. In a large bowl mix the wet ingredients: mashed banana, eggs, maple syrup, yogurt and vanilla extract to a bowl until well combined. In a large bowl, whisk together the dry ingredients: whole wheat flour, baking soda, cinnamon and salt. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix. 

  3. Next, mix in the oil. And if you like, a handful of nuts and/or dark chocolate chips. Add batter to the prepared pan. Bake for 50-60 minutes or until a tester inserted into the middle comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 10 minutes, then remove and transfer to a wire rack to finish cooling. Once the bread is cool, cut into slices. Toast and serve with nut butter spread or ricotta, banana and cinnamon on top for a healthy snack or breakfast on the go.


Storage tip: It will keep for 1 week in an air-tight container, in the fridge.
