Turkey Breakfast Burgers

Makes 6
500g turkey mince
1 ½ tablespoons olive oil
150g mixed mushrooms, trimmed and finely chopped
2 garlic cloves, crushed
1 tablespoon fish sauce or Worcestershire sauce
1 teaspoon dried oregano
Salt and fresh ground black pepper
Serving options, Sourdough bread, fried egg, sliced tomatoes, avocado and lemon wedge
1. Heat 1 tablespoon of oil in a wide fry pan over medium heat.
2. Add mushrooms to the pan. Sprinkle with a little salt and pepper. Cook mushrooms, stirring occasionally, for about 8-10 minutes, or until tender and liquid has dissolved.
3. Stir in the garlic and cook for 1 minute or until fragrant. Remove the pan from the heat, then stir in Worcestershire sauce. Transfer to a bowl. Set aside for 5 mins to cook slightly.
4. Add turkey mince to slightly cooked mushroom mixture. Mix until mixture is well combined.
6. Form mixture into 6 patties.
7. Heat another tablespoon and increase heat. Add the burgers, then cook for 4 to 5 minutes on each side or until an internal thermometer reads 75C when inserted into the middle of a patty.
8. Transfer to a plate and let rest, lightly covered with foil, for 5 minutes. Serve with fried egg, sliced tomatoes, avocado and lemon wedge.
