White Bean Dip

Check out this delicious bean dip! A serving of this will easily count this towards your 5 servings of vegetables and legumes per day.
White Bean Dip
425g can white beans
2 tablespoon hulled tahini
Juice from 1 lemon
1-2 garlic cloves, crushed
1 teaspoon white miso paste
Pinch cumin powder (optional)
Extra virgin olive oil, to drizzle
Garnish with finely snipped basil and toasted sesame seeds
Veggie sticks, to serve
1.Drain the can of cannellini beans, reserving some of the liquid from the can. Add the beans to a small food processor or blender.
2.Add the tahini, lemon juice, garlic clove, cumin and miso paste to a food processor. Begin blend the ingredients until it begins to come together. Add a splash of vinegar and an ice cube and continue to blend until you reach a creamy consistency, scraping down the sides with a spatula.
3. Give it a little taste and adjust the seasoning if needed. Spoon into a bowl, drizzle with olive oil and finish with a sprinkle of basil and toasted sesame seeds. Enjoy with veggie sticks.
